The Spaghetti Remix - Korean Inspired

1) Japchae Spaghetti * 잡채 스파게티

This recipe satisfies my japchae and spaghetti cravings in one dish. I love the mashup of ingredients from different cultures to enjoy a flavorful meal. Japchae is a classic Korean dish made with sweet potato starch glass noodles, egg, beef, and vegetables, such as carrots, spinach, red bell pepper, onion, and mushrooms, which are all cooked separately… but here comes the reeeemix : ) For a quick tasty whip up of japchae, I cooked everything in one deep skillet (except the spaghetti which was boiled separately in a pot then added to the skillet). I used firm tofu and skipped the egg and beef (save an animal <3 save the planet). This meal tops the charts! Get in my belly japchae spaghetti!

Total Cook Time: 6.5 minutes
Total Time: about 10 minutes

INGREDIENTS (1 large serving or 2 small servings)
150 grams dry spaghetti noodles (I like Garofalo durma wheat semolina spaghetti)
3 cloves garlic
1 green onion
1/4 red bell pepper
1/2 block of tofu (8 oz)
4 cups of spinach

1 Tbs avocado oil
1 2/3 Tbs soy sauce
1 tsp sesame oil
5 dashes of Himalayan salt
1/2 tsp ground black pepper

PREPARATION
Slice 1/4 red bell peppers in 1/2 inch pieces (leave some for garnish).
Chop green onion into 2 inch pieces and dice some for garnish.
Mince garlic.
Pat dry tofu and cut into cubes or rectangular blocks.
Set aside 4 cups of spinach.

INSTRUCTIONS

  1. Boil water in pot to cook the spaghetti (follow instructions of the spaghetti package to cook noodles to al dente). Add 4 dashes of salt after adding the spaghetti to boiling water.

  2. While the spaghetti is cooking, add avocado oil to a skillet on medium high heat.

  3. Add garlic, green onion, and red bell pepper in this order, then stir for 15 seconds and let cook without stirring for 30 seconds.

  4. Add tofu and stir for 20 seconds. Lower the heat to medium and let cook without stirring for 30 seconds.

  5. Add 1 Tbs soy sauce and stir for 20 seconds. Add salt and black pepper and stir for 20 seconds.

  6. Add cooked spaghetti and stir for 50 seconds.

  7. Add spinach and stir for until spinach is wilted (about 1 minute).

  8. Add 1 tsp sesame oil and stir for 20 seconds. Turn off the stove. Add 2 tsp soy sauce and stir. Let sit for 20 seconds.

  9. Serve the japchae spaghetti in a bowl or dish.\ Time to eat! Enjoy!

2) Jjajangmyeon Spaghetti * 짜장면 스파게티

In the Korean culture, when you present something and you want to give a spritz of happy excitement, one could say jjajaaan~, similar to tadaaaah~ : ) Whenever I finish cooking this dish I say “jjajaaang” with the extra G at the end. It is jjajanGmyeon after all :-) Eating this meal is happy excitement and gratitude of good food. I used to microwave packaged foods or order out for most of my meals before I became vegan and learned more about cooking. Fast forward over 12 years later and Jjajaaaan~ :) Here is a meal that takes me 15 minutes to make and is so delicious and yummy. I save money, save animals, help the planet, and eat to my heart’s desire in this simple jjajangmyeon spaghetti.

Total Cook Time: 11 minutes
Total Time: 15 minutes

INGREDIENTS (1 large serving or 2 small servings)
150 grams dry spaghetti noodles (I like Garofalo durma wheat semolina spaghetti)
1/2 onion (medium or large)
1/4 red bell pepper
1 green onion
2 garlic cloves
2 inches of sweet pickled radish
1/4 package of vegan Impossible burger

1 Tbs avocado oil
1 Tbs soy sauce
1 Tbs black bean paste (jjajangmyeon paste)
2 Tbs sweet potato starch
1/2 tsp ground black pepper
4 dashes of salt 1 cup of water

PREPARATION
Chop medium to large onion.
Slice red bell pepper.
Dice green onion.
Mince garlic.
Cut sweet pickled radish into bite pieces.

INSTRUCTIONS
1) Boil water in pot to cook the spaghetti (follow instructions of the spaghetti package to cook noodles to al dente). Add 4 dashes of salt after adding the spaghetti to boiling water.
2) While the spaghetti is cooking, add avocado oil to a skillet on medium high heat. Add onion to skillet and stir for 1 minute. (Drain spaghetti when cooked al dente.)
3) Add garlic and stir for 20 seconds.
4) Add Impossible meat and stir for 20 seconds.
5) Add soy sauce direclty onto the Impossible meat in skillet and stir for 20 seconds.
6) Let cook for 30 seconds then stir for 10 seconds.
7) Add red bell pepper and green onion (leave some for garnish) and stir for 30 seconds.
8) Add black bean paste and half a cup of water and stir for 1 minute.
9) Add 1/4 cup of water and stir for 15 seconds.
10) Add 1 Tbs sweet potato starch and stir for 15 seconds.
11) Add sugar and stir for 30 seconds.
12) Add 1/4 cup of water, 3 dashes of salt, and black pepper and stir for 10 seconds.
13) Let simmer on low heat for 3 minutes then stir for 5 seconds.
14) Add 1 Tbs sweet potato starch and stir in the starch.
15) Let simmer for 2.5 to 3 minutes until a thick gravy like consistency.

Place cooked spaghetti in bowl or plate and cover with jjajangmyeon sauce. Garnish with red bell pepper, green onion, and sweet pickled radish.

3) Bibim Spaghetti * 비빔 스파게티

This is spicy yummy. 1 Tbs of bokum gochujang will spice of these ingredients to make your taste buds drop it like it’s hot! My refrigerator always has bokum gochujang and regular gochujang readily available for a hot night on the town…in my kitchen : )

INGREDIENTS (1 large serving or 2 small servings)
150 grams dry spaghetti noodles (I like Garofalo durma wheat semolina spaghetti)
2 cups of shiitake mushrooms
1/4 cup of julien carrots
1 onion (medium or large)
1/4 firm tofu
3 cloves of garlic
1 green onion
1 Tbs avocado oil
1 Tbs soy sauce
1 tsp ground black pepper
1 Tbs bokum gochujang (mix red pepper paste)
4 dashes of salt
1 tsp roasted sesame seeds

PREPARATION
Slice shiitake mushrooms.
Dice onion.
Slice carrots for a 1/4 cup of julienne carrots.
Chop green onion (leave some for garnish).
Pat dry 1/4 block of firm tofu (4 oz) and cut into cubes or rectangular pieces.

INSTRUCTIONS
1) Boil water in pot to cook the spaghetti (follow instructions of the spaghetti package to cook noodles to al dente). Add 4 dashes of salt after adding the spaghetti to boiling water.
2) While the spaghetti is cooking, add avocado oil to a skillet on medium high heat. Add mushrooms and stir for 1 minute. (Drain spaghetti when cooked al dente.)
3) Add soy sauce and stir for 30 seconds.
4) Let cook for 40 seconds.
5) Add onion and stir for 45 seconds.
6) Add carrots and stir for 30 seconds.
7) Add garlic and stir for 45 seconds.
8) Add black pepper and stir for 20 seconds.
9) Add tofu and green onion at the same time and stir for 1 minute. Let cook for 2.5 minutes, stirring occasionally.

Place cooked spaghetti and skillet contents into a big bowl. Add bokum gochujang in the bowl and mix well. Garnish with green onion and roasted sesame seeds.
