Deelitefully Delicious (Vegan Rolled Egg *비건 계란마리)

You won’t miss eggs after this! Let’s rock and JUST egg roll!

 

The combination of a bite size rolled egg with rice and kimchi, and all vegan?! OALALA! No over breeding of hens, no cholesterol, plennnnnty of protein, and did I mention it’s deelitefully delicious...like the 1st time I heard “Groove Is In The Heart” by Deelite! Does anyone else start humming and singing when you taste something so good :) I couldn’t ask for another ❤️

INGREDIENTS:
1 cup JUST Egg
1 green onion
salt (I like Himalayan pink salt)
roasted sesame seeds (garnish)
2 tbs avocado oil

PREPARATION:
Dice the green onion and leave a few sprinkes for garnish.
Mix the diced green onion, JUST Egg, and salt. Now we're ready to rock and egg roll!

INSTRUCTIONS:
Set stove on medium high heat. Once hot, pour in a thin layer of JUST Egg mixture into a non-stick pan. After about 5 minutes (when the mixture is cooked), start rolling the vegan egg. Keep rolling until there is a little piece left at the end of the roll. Then pour in another thin layer and repeat rolling when the vegan egg is cooked. Repeat until no mixture is left.

Shape the egg with spatulas for about a minute by pressing gently in 90 degree angles as seen on the video :)

Set the egg on a wooden cutting board and let cool for 5 minutes. Then slice into 1 inch pieces. Serve with quinoa or rice, or both! Garnish with roasted sesames seeds. My favorite banchan (side dish) and condiment for this dish is kimchi and sriracha. It also tastes deeelitefully delicious with ketchup or just sweet and simple plain! This vegan egg recipe will be a hit for any meal. : )
