Beyond Beef Bulgogi * 비건 불고기
Bulgogi is Korean BBQ and one of the most popular Korean dishes. This vegan bulgogi recipe with Beyond Meat's vegan beef is now on my favorite go-to list for any occasion!

Total Cook Time: 8 minutes
Total Prep Time: 6 minutes plus 30 minutes if marinating Beyond Beef in the fridge
Total Time: 14 minutes without marination (44 minutes with marination)
INGREDIENTS:
Beyond Beef by Beyond Meat
148 g sliced onion (1/2 medium onion)
3 tbs minced garlic
3 tbs soy sauce
2 tbs brown sugar
2 tbs rice syrup
1 tbs sesame oil
1/2 tsp black pepper
1/3 cup pureed onion (1/4 med onion)
1/4 cup diced green onion
10 perilla leaves (or any of your favorite lettuce leaves for wraps)
vegan kimchi
Rice (I used a mix of quinoa, brown rice, and white rice but one of these tastes great as well!)
PREPARATION:
Add the entire package of Beyond Beef with all the ingredients except the sliced onion and mix well.
Marinate in the refridgerator for 30 minutes. If you’re short on time, don’t worry, cook it after mixing :)
COOKING INSTRUCTIONS:
Heat pan to medium high heat.
Add 1 tbs of avocado oil.
Add the Beyond Beef bulgogi mix to the pan.
After 3 minutes, stir.
Let it cook for another minute and stir.
After 5 minutes total cook time, add sliced onion and cook for another 3 minutes, stirring a couple of times.
All done! Let’s eat!
Wrap the rice and Beyond Beef bulgogi with a perilla leaf (or any lettuce leaf you like!) Add kimchi to the wrap for a little kick :)
